About this Cocktail

Found myself with extra Mezcal and a bottle of Bitter Truth Violet Liqueur. This is the result.

Ingredients:
  • 1oz Alipus Mezcal
  • .25oz Bitter Truth Violet Liqueur
  • .25oz Cocchi Americano Bianco
  • .25oz lime
  • .25oz simple
  • 3 egg whites
  • .25oz lemon
  • .25oz St. Germain
  • Pinch Xantham Gum
Preparation:

Mix the Mezcal, Violet Liqueur, Cocchi, lime and simple and shake with ice. Double Strain and top with foam. The foam is made by combining egg whites, St. Germain, lemon, and Xantham gum in a whipped cream dispenser. The Xantham Gum is not required but helps to make the foam lighter. The foam recipe will make several cocktails.
