Close relative to the Tom Collins. I had some oleo-saccharum handy so I decided to further lemon up a Collins as well as throw in some funk and hibiscus.
--- - 1.5oz Tanqueray gin- "0.5 oz lemon juice "- 0.25 oz Smith & Cross Traditional Jamaican Rum- ~0.25 oz oleo-saccharum (to taste)- "4 drops Bittermens Burlesque bitters "
Obviously you can't tell someone, "I'll get right on that - just give me about two hours to macerate some lemon peel in sugar" so if you don't have it sitting around, well, make do with regular simple syrup. Shake well, double strain, garnish with a swath.
