I'd wanted to find an excuse to use thyme & sloe gin in a cocktail for a while, simply because the puns for its name were almost endless.

Landed on this little number yesterday, the name I thought was very apt for a Sunday as people were in work for brunch, kicking back & relaxing. I guess it'd also work pretty well at a party at Madonna's house.

  • 30ml Hayman's Sloe Gin
  • 15ml St Germain
  • 10ml Pear & Cactus Liquer
  • 25ml Fresh Lemon Juice
  • 20ml Sugar Syrup (2:1)
  • 3-4 Sprigs of Fresh Thyme (The size of the one used a garnish)
  • 1 Egg White

Add all ingredients to mixing glass (strip thyme leaves from stem, bruise gently & add)
Dry shake all ingredients
Wet shake 'em
Double strain into a chilled coupette

Garnish with a sprig of fresh thyme & a few dashes of Peychaud's bitters
